Green Chilli Garlic Oil

You’ve seen the viral chilli crisp all over your feed—rich, spicy, and totally addictive. Now meet its vibrant spring sibling: Green Chilli Garlic Oil.

This seasonal take swaps out red heat for the bright bite of green chilli, layered with crispy garlic and shallots, fragrant chives, spring onion, sesame, maple syrup, and just the right touch of salt. It’s herby, fiery, sweet, and crunchy all in one spoonful.

Make a jar, keep it close, and get ready to drizzle it on everything. This is the kind of condiment that turns even the simplest meal into something you’ll crave.

Green Chilli Garlic Oil
makes 300ml jar

Ingredients:
1 cup olive oil
3 cloves garlic, sliced
1/2 banana shallot, sliced
3 spring onions
2 green chillies
10g chives
1 tbsp salt
1 tbsp maple syrup
1 tbsp sesame seeds

Method:

  1. Finely dice green chillies, spring onions and chives

  2. Add to a small heat proof dish along with sesame seeds and maple syrup and set aside.

  3. Finely slice the garlic and shallot add to a cold frying pan and pour over the cold olive oil and bring the pan to a gentle simmer.

  4. Stir constantly, watching the garlic and shallot very carefully so it doesn’t burn.

  5. Once golden brown, using a sieve, strain the hot oil into the small heat safe dish over the top of the fresh chilli, chive and spring onions.

  6. Leaving the strained garlic and onions to cool down before adding them back in.

  7. Transfer this into a glass jar once cooled slightly and store in the fridge to be used upon pastas, salads, pizza and or our Tahini Cabbage recipe!
