Char-grilled baby gem caesar salad

It’s time to elevate your BBQ game with a fresh, smoky twist, this Char-Grilled Baby Gem Caesar Salad is your new go-to side dish. With crisp lettuce charred to perfection smothered in a tangy sunflower seed and hemp seed dressing, and vibrant toppings, this salad is anything but ordinary.

Char-grilled baby gem caesar salad
serves 8 as a side

Ingredients:
4 baby gem lettuce, quartered
Drizzle of olive oil

Dressing:
100g sunflower seeds
1 tbsp hemp seeds
1 tbsp capers with brine
1 tbsp dijon mustard
juice and zest of 1 lemon
1 garlic clove
salt and pepper to taste
250ml soy milk

To Garnish:
Capers
Mixed seeds
Fresh herbs such as chives and mint

Method:

  1. Chop the baby gem lettuces into quarters, and drizzle with olive oil

  2. Place onto a hot BBQ or griddle pan and char for a few minutes on each side until charred lines appear.

  3. Meanwhile, add sunflower seeds, capers, mustard, lemon juice and zest, garlic, salt and pepper and soy milk to a blender and blend until smooth

  4. Take the lettuce off the BBQ and add to a shallow serving dish. Drizzle the dressing on top, and top with chives and sesame seeds.

  5. Serve and enjoy!
