So many of you buy our cheese from our online shop but I very often get asked, ‘how else can I eat your cheese other than on a crackers?’ This is a great question and one that I am going to trying and answer with lots and lots of recipe ideas over the coming months.

First up is our Farmhouse Mature … This is one of our most diverse cheeses for cooking with. It has a lovely strong flavour that lends itself so well to being made into a rich and comforting cheese sauce. Today I am going to share with you a super quick Mac & Cheese recipe that you can serve in under 10 minutes!

This recipe is for 4 people and uses a whole block of Farmhouse Mature, however if you just have a little bit left and you’re just cooking for yourself, you can quite easily reduce this recipe down to serve 1 person.

Mac & Cheese was always my favourite meal growing up as a child. It is so comforting and indulgent and just what is needed in the winter months. I like to add broccoli to mine to cut through the richness of the sauce but if you don’t fancy adding broccoli then a peppery green salad would really compliment this dish.

10 Minute Wild Root Mac & Cheese with Broccoli

Serves 4

10 minutes

Ingredients

For Cheese Sauce:
1 block of Farmhouse Mature
1 cup plant-based milk (I used homemade soy milk)
1/2 tsp garlic powder
1 tsp salt
1/2 tsp black pepper

For Pasta:
400g pasta
300g broccoli florets
Black and white sesame seeds

Preparation

  1. Bring a pan of water to the boil, add a pinch of salt and pasta and simmer as per the instructions on the packed. 5 minutes before the pasta is done, add the broccoli florets.

  2. Meanwhile add all of the sauce ingredients to a blender and blend until very smooth. Taste and adjust seasoning if necessary.

  3. Once the pasta is done, drain but keep 1/4 cup of pasta water.

  4. Add the pasta and broccoli back to the pan, along with the sauce and the 1/4 cup of pasta water. Place back on the heat and warm through.

  5. Once heated up, spoon into a large serving bowl and garnish with sesame seeds.

  6. Enjoy!
